2 lbs boneless/skinless chicken breasts (cubed)
1-11 oz can mushroom soup
1-11 oz can water
1-11 oz can chicken broth
1 C Uncle Ben's converted rice (no instant)
2/3 C chopped onion
2/3 C chopped celery
1 t salt
1/8 t pepper

Heat Dutch oven. Blend mushroom soup, chicken broth and water in a bowl. Place chicken in oven and add all remaining ingredients and stir. Bake with 10-12 coals under oven and 10-12 coals on top for about 45 minutes. If too soupy, remove lid and continue cooking until desired result.

- add 2 t finely chopped pimento
- add 1/2 C chopped red bell pepper
