Very Green Stuffed Peppers

1 large onion, half diced, other half sliced 1/4 inch thick
3/4 C wild rice, precooked
1/2 C Minute Rice, precooked
1 medium tomato, diced
1/4 C seasoned bread crumbs
1 egg, beaten
4 to 6 oz cheddar cheese, grated
1/4 C green olives with pimentos, chopped
salt and pepper to taste
2 medium green peppers
1/2 C water


In bowl, mix all ingredients except peppers and onion slices. Cut top off each pepper an clean out seeds. Stuff peppers. Place onion slices on bottom of pot. Place peppers on top of onions. Add water and cover. Over a medium flame, bring water to boil and cook peppers 45 minutes.
