Split Pea Soup

Serves 8

2 C dry split peas
1/4 lb bacon, diced
1 small onion, chopped
1 t salt


Place peas in 2-1/2 C water and soak overnight.

Brown bacon and crumble it. Add bacon, salt and onion and cook covered over slow fire for 1 hour.

Inspect occasionally, adding small amounts of water, if needed, to thin soup while it cooks. Serve with crackers.
