One Pot Ham Hocks and Lima Beans

1 16 oz. package small dry lima beans cleaned/sorted
2 ham hocks
1 medium - large brown onion chopped
water to cover about 1-2 inches

The beans can be covered and soaked overnight (this will take the beans less time to cook) - or throw everything in the pot after breakfast and put it on the leftover fire or coals. keep the fire hot until boiling. Keep beans simmering to serve this dish for lunch or let coals cool until about an hour or two before supper and then restoke the fire just before supper time.
