Savory Stuffed Potato

Select one or more medium potatoes for each diner. Wash potato, prick with fork to prevent splitting and grease with butter. Wrap whole potato in foil and place under campfire embers for 1-1 1/2 hours. Turn once halfway through cooking time. Cut potato in half, scoop flesh into a bowl, leave skin intact. Mash potato with butter, egg yolk, salt, pepper and nutmeg. Mix through filling of choice, i.e. creamed corn, bacon and onion, etc. My favourite is finely diced capsicum, onion, and bacon, fried until tender. Add generous handfuls of cheese, carfully wrap again in foil and place, top up, in the embers for an additional 15 minutes.
