Crunchy Walleye Fillets

1 Egg
1 cup evaporated milk
2 cups cracker crumbs
1/8 tsp salt
1/8 tsp pepper
1 1/2 pound walleye fillets. (Other lean fish will also work - Small and Large Mouth Bass, Stripers, Perch etc)
2 to 4 TBSP vegetable oil


In a shallow dish blend egg and milk. On anther plate or bowl combine cracker crumbs, salt and pepper. Cut fish into serving size pieces. Dip in milk and then coat with crumbs.

In a skillet heat oil. Fry a few pieces at a time until golden brown approx 3 minutes. Remove from pan and drain extra oil on paper towels.
