Fried Lemon Panfish

1 cup all-purpose flour
2 ts grated lemon peel
1/2 ts salt
1/4 ts pepper
1 cup water
Vegetable oil
1 1/2 pounds panfish (Perch, White Bass, Small Mouth Bass etc)
All Purpose Flour

In a medium bowl, combine flour, lemon peels, salt and pepper. Blend in water and cover. Place in refrigerator for at least 30 minutes.

In a deep fryer or deep skillet heat oil (1 1/2 to 3 inches deep) to 375 degrees. Coat fish with flour and then dip in chilled batter. Fry fish for approx 3 minutes turning occasionally.
