Salami Eggs

3 tablespoons butter
2 medium sized onions, sliced
1/2 pound salami, thinly sliced
4 eggs
salt and pepper to taste

Heat the butter in a skillet over medium coals. Sauté onions until lightly browned, then place in a bowl and keep warm.

Sauté the salami slices on both sides and arrange neatly in the bottom of the skillet. Top with the onions and cook briefly. Make shallow wells by pressing the onion rings in four places with the back of a spoon. Break an egg into each well, season with salt and pepper. Cover and cook until the eggs are set, serve immediately.
